His celebrated restaurant Guillaume at Bennelong, situated in the southern shell of the iconic Sydney Opera House, won almost every major accolade in Australian food, as well as international recognition. The restaurant held its last service on New Year's Eve 2013. Bistro Guillaume, his award-winning take on the classic French bistro, opened in Melbourne in 2009; a second venue followed in Perth in 2012.
